Fresh From Florida Program Certifies MIA Restaurant

The state of Florida’s Fresh from Florida program has certified Icebox Cafe at Miami International (MIA) as a provider of locally sourced food.

The restaurant’s percentage of purchases from southern Miami-Dade County’s farm area also meets the qualifications of the county’s Redland Raised program.

The Miami Beach restaurant opened at MIA in 2010. Company officials also recently opened the Mediterranean Kitchen inside the North Terminal Marketplace.

“Now more than ever, travelers are expecting world-class airports to provide the freshest, healthiest food options possible, so to that end, we congratulate Icebox Cafe on becoming certified,” says Emilio T. Gonzalez, Miami-Dade aviation director. “We look forward to more restaurants at MIA increasing their use of locally grown food, which obviously benefits our local economy, as well.”

The farm-to-table movement represents a return to the use of extremely fresh ingredients that have been grown or sourced within 100 miles of the restaurant location in an effort to ensure that the food available is the freshest and most in-season, while also promoting a local region’s culinary character.
