Dane County Regional Food Contract Goes To SSP

Local chef Tory Miller, a James Beard Award winner, will operate one of the new eateries at Dane County Regional (MSN) as part of a 10-year contract the airport awarded to SSP America.

Mad Town Gastropub, featuring a menu of fresh, sustainable dishes created by Miller, will debut in the fall of 2016, as will an expansion to Metcalfe’s Local to Go, a Madison-based, family-owned restaurant operated by SSP.

“I’m really excited to incorporate local food to the dining scene at the airport,” Miller says. “Our airport is growing a lot, and it’ll be great to be able to showcase some of the talented producers Madison has.”

Other concepts planned for MSN as part of the deal, which will run through 2026, include the introduction of a new Vintage Wine & Tapas bar, which will be co-located with the existing Ancora Artisan Coffee & Tea. The new location, when finished, will serve coffee all day, but add wine and tapas to its evening offerings. The venue will also feature piano performances. Construction on this concept should be complete by the end of 2016.

SSP America is the sole purveyor of food and beverage at MSN and has operated there since 2006. The extended lease follows the company’s 2013 investment in the airport, which included strengthening the airport’s commitment to local Madison-based businesses.
