HMSHost Brings Historic Establishment To YUL

As part of the expansion and improvements at Montreal-Pierre Elliot Trudeau International (YUL), HMSHost Corp. has introduced the notable Montreal establishment L’Auberge Saint-Gabriel to the airport.

L’Auberge Saint-Gabriel, built in Old Montreal in 1688, was the first operational inn in North America. The restaurant is know for its Quebec cuisine.

“We are thankful to partner with Aeroports de Montreal and renowned L’Auberge Saint-Gabriel to offer Montreal-Trudeau travelers a true taste of the exquisite cuisine that represents Quebec,” says Stephen Douglas, vice president of business development for Host. “The addition of L’Auberge Saint-Gabriel to Montreal-Trudeau illustrates the local area’s fine dining to the thousands of international travelers passing through the airport each day.”

Passengers will be able to eat dishes like roasted Cornish game hen, pan-seared salmon filet, stout-braised pork shoulder, beef or salmon tartars, duck confit sandwich and charcuterie and cheese platters.

A breakfast menu will also be served, which includes poached eggs on a handmade Danish with hollandaise mustard sauce; tarts featuring mushrooms, bacon and poached eggs, and French toast with stewed fruit and lemon zest mascarpone.

“We are very happy to welcome L’Auberge Saint-Gabriel to Montreal-Trudeau,” says James Cherry, president and CEO of Aeroports de Montreal. “This restaurant, part of our new commercial area in the recently expanded international jetty, will provide our passengers with distinctive cuisine and attentive service. L’Auberge Saint-Gabriel illustrates perfectly what makes Montreal such a unique culinary destination.”
