HMSHost Opens Skillet At SEA

HMSHost has opened Skillet, a modern diner, in the North Satellite at Seattle-Tacoma International Airport (SEA). The local Seattle brand initially launched as a food truck at the airport. This new full-service dining experience opened in collaboration with The Skillet Group, Port of Seattle, and global restaurateur HMSHost, along with its Airport Concessions Disadvantaged Business Enterprise (ACDBE) partner La Plaza International, LLC.

Skillet’s opening is part of the North Satellite Modernization Project at Sea-Tac Airport. A second Skillet location is slated to open in the C Concourse by the end of the year.

Skillet started in Seattle in a vintage Airstream kitchen, delivering elevated street food to hungry Seattleites curbside, and grew to an iconic restaurant brand. “Skillet is part of the fabric of the Seattle community and now we’re able to share their dynamic comfort food with travelers from around the world inside Sea-Tac Airport,” says Stephen Douglas, vice president of business development, HMSHost. “We’re grateful to the Port of Seattle for partnering with us to add the finest of Seattle’s culinary scene to its new North Satellite.”

Menu items include brunch favorites, including the Fried Chicken & Waffle, the homemade Doughnut Holes or the gluten-free and vegetarian-friendly Chilaquiles, among other enticing options. Entrée and sandwich favorites includes Mama’s Meatloaf with pork and beef, glazed with ketchup demi, bleu cheese, onion rings, mashed potatoes, and seasonal vegetables, as well as the Blackened Salmon Sammy with pickled shallot, lemon aioli, and arugula on a potato roll.

Skillet’s drink menu includes a selection of spiked coffee, bubbly cocktails, and the signature Bacon Jam Bloody Mary, which includes a bacon-jam infused vodka and bacon salt. For those that want to try them all, Skillet offers a cocktail flight to taste a selection of three. The restaurant also offers a grab-and-go section offering sandwiches, salads, snacks, and beverages.
