HMSHost Serves Up The Hearth By Lynn Crawford At YYZ

Travelers through Toronto Pearson International (YYZ) have a new rustic restaurant to visit in Terminal 1.

HMSHost Corp., in partnership with Chef Lynn Crawford, has opened The Hearth by Lynn Crawford. Crawford has appeared on shows such as “Pitchin’ In” and “Great Canadian Cookbook;” she’s also a resident judge on “Chopped Canada” and has a restaurant in Toronto.

“Partnering with Lynn Crawford and Toronto Pearson airport has been a greatly rewarding experience for HMSHost,” says Amy Dunne, vice president of business development at HMSHost. “Chef Lynn is a fantastic culinary talent. Her outlook on creating distinct dishes and her local ties to Toronto have produced dining experiences for travelers which have far exceeded even our wildest expectation.”

Dishes available include the cider-glazed pork chop with roasted apple chutney and sausage gravy; flatbread with foraged mushrooms, onion petals, goat cheese and pesto; and the peameal on a bun sandwich with honey mustard peameal bacon, aged Canadian cheddar and onion jam. For an appetizer, travelers can order smoked salmon mousse and fennel marmalade served with apples, hazelnuts and greens; or they can try Pavlova vanilla strawberries, hazelnuts and chocolate sauce for dessert.

“I am so excited to be partnering with HMSHost on this restaurant for Toronto Pearson International Airport,” says Crawford. “Working together to introduce travelers to Toronto’s brilliant food culture and artisanal food industries has been both fun and inspiring. Through my relationships with farmers, artisans and producers across Canada, I plan to honor and extend my commitment to these ingredients with The Hearth. Also, Pearson being the busiest airport in Canada makes it an ideal space to feature national and regional ingredients and cuisine.”
