Custom dining management service firm Metz Culinary Management has released its 2024 culinary trends that include growth in nostalgic foods, chaos cuisine, ancient grains and heritage ingredients, upcycling and zero waste, and more technology that increases efficiency and reduces checkout times.
Metz experts expect the growth in nostalgic food to continue with more vintage-inspired recipes and nostalgic ingredients. Metz’s chefs are already developing ways to incorporate classic cereal and candies into doughnut toppings to enchant partners and their guests by reaching back into the past.
Chaos cuisine is taking the recent fusing of different ethnic tastes and ingredients to the next level, while the trend of using more ancient grains and heritage ingredients, including quinoa and farro, is part of an overall healthy eating trend impact both travelers and non-travelers alike.
On the environmental services front, Metz expects to see more upcycling, which transforms food scraps into useful, new products, while the trend in friction-less checkout technology should also continue to gain wide acceptance, with the next big move expected to be an increase in biometric solutions that associates a purchaser’s payment method with their palm scan.
