Twist by Roger Mooking, under the operation of HMSHost Corp., opened this week in Terminal 1 at Toronto Pearson International (YYZ).
The restaurant was opened in partnership with celebrity chef, television host and cookbook author Roger Mooking.
Twist fits in with efforts by YYZ officials and HMSHost to bring more local flavors to the airport.
“Bringing Twist to Pearson is a dream come true for me,” Mooking says. “Being in the airport has allowed me to showcase some new and exciting menu items for travelers that will give them a taste of our city’s uniquely diverse culinary scene. Working with HMSHost to bring this restaurant to life has been such a great experience.”
Twist incorporates a global twist on locally sourced North American comfort foods, HMSHost officials say. Menu items include Splat Scones made with Devonshire cream, lavender honey, and peameal bacon. Fried chicken is made with Japanese spices and Thai-influenced crispy herbs with a lime honey dip for presentation and flavor. The restaurant also focuses on increasing healthy, gluten-free, vegetarian and sustainable options available to travelers at YYZ.
In addition to working with Twist, Mooking will consult on new dishes and menu enhancements at other HMSHost restaurants at YYZ and will integrate several local suppliers in his menu creations.
